1 tablespoon vegetable oil 1 pound boneless sirloin steak, sliced in thin strips 8 ounces fresh mushrooms, sliced 1/4 cup water 2 tablespoons unbleached flour 1 teaspoon dry mustard 1 teaspoon salt 1/4 teaspoon pepper 1 cup dairy sour cream 2 cups hot cooked rice or noodles 1 medium onion, sliced
1. Stir oil and meat in 2-quart casserole until beef is coated.
2. Cover and microwave on high (100\%)) until meat is no longer pink, 4 1/2 to 5 minutes.
3. Remove meat from casserole; reserve meat and juices.
4. Add mushrooms and onion to meat juices.
5. Cover and microwave until mushrooms are tender, 5 to 6 minutes.
6. Shake water and flour in tightly covered jar; stir into mushrooms.
7. Sprinkle with dry mustard, salt and pepper.
8. Microwave, uncovered, to boiling, 30 seconds. Boil until thickened, 1 minute.
9. Stir in reserved meat, then sour cream.
10. Microwave uncovered until hot, about 1 minute.
11. Serve over hot cooked rice or hot cooked noodles.
