1 shallot, peeled and diced 1/2 tsp. Dijon mustard 1/4 cup wine vinegar Kosher salt and freshly ground black pepper 1/2 cup extra-virgin olive oil 1/2 cup canola oil
1. Combine the shallot, mustard, vinegar, and salt and pepper to taste in a small bowl.
2. Whisking constantly, gradually ad the olive oil and canola oil.
