2/3 cup Unbleached flour
1/2 cup Whole-wheat flour
2 tsp baking powder
1/4 tsp salt
1 1/3 cup milk
2 tablespoons oil
1 medium ripe banana, finely chopped
1. Combine flours, baking powder and salt in a mixing bowl.
2. Mix together milk and oil. Stir into dry mixture just enough to moisten all ingredients.
3. Fold in banana.
4. Spoon onto a hot, well greased griddle.
5. Turn once. Makes 10 to 12 pancakes.
