3 large potatoes 1 tablespoon butter 1 tablespoon cream or milk 1/2 teaspoon salt 1/8 teaspoon pepper 1 egg white, stiffly beaten
1. Bake large potatoes at 450 degrees F about 40 minutes or until soft.
2. Remove from oven; cut in half lengthwise and scoop out inside.
3. Mash, adding the butter, salt, pepper and cream. Mix well.
4. Fold in the stiffly beaten egg white.
5. Refill potato shells; return to the oven to brown, about 10 minutes.
