2 cups almond flour 1/2 cup Splenda 1/2 cup butter, softened 1/2 teaspoons salt (if using salted butter, omit salt here) 1 teaspoon vanilla extract 1 teaspoon almond extract
1. Preheat oven to 325F. Coat baking sheet with cooking spray.
2. In large bowl, combine flour, Splenda, butter, salt (if using), and extracts. Form dough into walnut-sized balls and place on baking sheet 1" apart.
3. Bake 5 minutes. Press down lightly with with fork, then continue to bake 15 minutes. Let cool on baking sheet.
HINT: To make almond flour, grind almonds into a powder the consistency of all-purpose flour in your food processor.
